Are you UK based? There's courses out there using costal breathing to control the stammer which also address real life situations such as ordering food etc. On the psychological aspect I'd say not to worry about something which you have no idea will happen or not. You're spending a lot of mental energy on one moment in time that will be pretty insignificant in the grand scheme of things.
