Since what we stutter on is likely to change over time (and depending on other factors such as context, mood or lack of sleep), we're not likely to gain much usefulness from such a tracking. But of course, as a matter of paying attention to the issue(s), it would probably be useful. I think it could perhaps be a good place to start with regards to consulting a speech therapist about the currently problematic sounds. So, it's not so much the tracking that'll get us anywhere - it's rather what we're going to do with our increased attention about it.
