Whoa, a fellow stuttering celiac! We won the genetic lottery I guess. For what it's worth, I've found that I've only been safe eating at totally gluten-free restaurants. Helps with the thousand questions you have to ask as a celiac at a restaurant too. I have other allergies too, so not having to ask about their cccccross cccccontamination pppprotocols (three awful words for me) is a relief. Definitely a lifestyle adjustment but once you start cooking for yourself almost every meal, you'll feel so much better. It sounds exhausting (and it is) but I think it's worth it to maintain my health long-term.
