No problem. Most customers are not looking for an over eagerly chatty server. It will actually give you a wonderful chance to exercise a regular set of social and practical phrases, and if/when you 'feel' the tightness of a stutter beginning, allow yourself to find your own way of expressing through the stutter. The hardest part will be the handling of difficult customers, regardless of any socially perceived impediment. As for disclosure, that is completely up to you and I do not believe necessary. You present yourself as you. You are not the stutter.
