I also tend to see myself in the same scenarios as you, where scripted talk (eg. how are you?, basic helping like "so first you..") is relatively fluent, but unscripted talk sometimes goes awry. I depends usually on if I know what I am going to say. If my thought is not finalized in my head, and I begin speaking, I end up having a visible stutter. But even then, I am usually able to pick myself up and not stutter as much as I could have. I feel like my real kicker though is who I am talking with, because I feel that as of now, there are some people who I just tend to stutter with, and some who I just don't as much. When I don't stutter with a person during the first few times we meet, I end up stuttering with him scarcely. On the other hand, when I stutter with a person for the first time we meet, then I end up almost always stuttering in front of him.
