I HATE this. I usually just do a head nod or smile to show my appreciation. I find it very difficult to off-the-cuff say thank you or other quick greetings if I happen to pass by someone I know crossing a street or other situation where me and the other person are moving quickly or don't stop long enough for your brain to fully understand the situation and prepare for speaking.
