Grabbing the hand of a customer seems out of bounds for a store setting, but trying to convey support just seems sympathetic. The wording is a matter of preference, I suppose. Perhaps it's someone who has stutter in their own family, and therefore felt more empathy - who knows? - Never had it happen myself.
