Anyone got any tips or tricks for ordering at cafes or restaurants?

Anyone got any tips or tricks for ordering at cafes or restaurants? The place I have the most trouble with my speech is ordering at the counter of restaurants, cafes or fast food places. I tend to get nervous and blocked up and stumble over my words. The worst part is giving my name for a coffee order caus I'll get stuck on the first letter. I sometimes give a fake name but it's easy to forget the fake name I gave or miss it when they call it out! So yeah, has anyone got any tips or tricks they like to use for this situation?
